Happy Monday! I hope that everyone had a great weekend. This week is pretty busy and with Justin's work schedule and my grandparents coming into town (and taking us to dinner) I won't have to cook too much : )
However, I am really excited to make Loaded Baked Potato Soup (adapted from Cooking Light) again tonight. I am going to try and substitute plain Greek yogurt for the reduced fat sour cream and see if we can taste a difference. We are having it with Weight Watcher's version of Red Lobster's Cheddar Biscuits. For dessert tonight we will be having Weight Watchers Butterfingers Pie. (Update: we loved the soup with Greek yogurt and everything else was amazing, recipes soon)
I am going to try Weight Watchers Bubble Up Enchiladas too. We are also hoping to attempt a different version of quinoa to pack for our lunch this week called Quinoa Fried Rice (except this recipe looks a whole lot healthier than the real thing).
On the sweet side, I am hoping to try and make Weight Watcher's Cheesecake Bars. In case you can't tell, the theme of this week is revamping some of our favorites to make them a little bit healthier. It is also a completely "pinspired" week in our house too.
