No Bake Chocolate Peanut Butter Granola Bites


Ok, I admit it. I am slightly obsessed with bite sized desserts. I relish the chance to use my mini muffin baking tin. If a recipe can be made into a miniature version, I am all over. Check out last week's Snickerdoodle Cups or my mini {almost} Vegan Pumpkin Cupcakes for further proof of this obsession.

So when I saw Crystal from Money Saving Mom post about making these Chewy Homemade Granola Bars, I decided to make them in bite sized form. To top it off, they were no bake too! Living in South Florida means that any recipe becomes infinitely better looking when you realize you don't have to turn your oven on.

These Chocolate Peanut Butter Granola Bites would totally be worth turning the oven on for though. They are so simple and yet so good. The combo of peanut butter, honey and dark chocolate gets me every time. They are the perfect  sweet treat to cap off a meal without being too overpowering. The presence of Quaker oats makes you feel a little less guilty about eating them too : )


I have been wanting to try making some kind of homemade granola bar for some time now but for some reason I thought that they would be very difficult and labor intensive. Not this recipe. It took me longer to wash the dishes then it did to assemble these babies.

I did not spray my mini muffin tin or use liners when I made them but my recommendation would be to do one or the other to make them easier to remove from the tin once you refrigerate them.

I placed them in mini liners after the fact to store them easier.

What I really love is that these can be modified to include anything you you like or have on hand. You can add dried fruit, seeds, nuts, coconut shreds, pretty much anything. You can also play with the kind of peanut butter you use (I used regular but I bet crunchy would be awesome), the type of chocolate you choose, or you could even leave out the chocolate for a healthier version. Not that we would do that in this house, but hey, more power to you.


No Bake Chocolate Peanut Butter Bites
Recipe adapted from Heavenly Homemakers

  • 1/2 cup of peanut butter (or any kind of nut butter you prefer)
  • 1/3 cup of honey
  • 1/4 cup canola oil (or any kind of oil you prefer)
  • 2 cups oats (I doubled this from the original and loved it)
  • 1 cup dark chocolate chips (or any kind of mix in mentioned above)
  • 1/2 cup chopped peanuts (or other mix in)
1.) In a sauce pot on medium heat, mix together peanut butter, oil and honey. Heat and stir until completely combined.






2.) Remove from the heat and mix in oats followed by your other mix ins of choice. Stir until well combined.


3.) Using a cookie scoop or tablespoon, scoop mixture into mini muffin tins. As mentioned above, you may want to line or grease the tin lightly to help with removal. You can also go the more traditional route and press the mixture into an 8x8 pan to be later cut into bars.

Mine made exactly 20 bites when I was done.

4.) Refrigerate for at least two hours before removing from tin or cutting the pan into bars.


5.) Store in the refrigerator in an air tight container.

These won't last long!
